Conference Beat®–Institute of Food Technologists (IFT) Annual Expo

July 2024

Professionals from a wide range of disciplines in the food industry gathered for this annual conference in Chicago that attracts the best and brightest in food science and product development. This is a show that celebrates science with robust and often controversial discussions of issues related to processed food, sustainability and nutrition.  The show boasted over 1,000 exhibitors and 85 companies in the Startup Pavilion.

The Wall Street Journal’s Global Food Forum is an exclusive invitational event that gathers leaders in the food business to discuss the issues of the day impacting the world of food domestically and internationally.  This exhilarating, one day session includes leaders in agribusiness, food manufacturing, restaurants, retail and government.

17 speakers were interviewed by 10 journalists in a lively debate about the trends that are transforming the food business. The day also offered the opportunity for small group lunch conversations with the keynote speakers and this report includes some insightful comments regarding the future of restaurant chains from the conversation with Ron Shaich of Act III Holdings and founder of Panera.

Conference Beat® – Private Label Manufacturers Association, Chicago

The Private Label Manufacturers Association (PLMA) themed The Store Brands Phenomena was a sold out show that drew over 13,000 attendees. 600 new exhibitors were among the more than 2,700 exhibitors. 

International pavilions dominated the show with almost half of the exhibitor floor filled with suppliers outside of the U.S. The Italian pavilion was by far the largest trade delegation of the 40 country pavilions. In total 60 countries were represented.

The Wall Street Journal’s high profile, high energy gathering of food industry celebrities and the Institute of Food Technologists (IFT) that attracts the best and brightest in food science and product development gathered in Chicago for two conferences to explore the future of the food business.  

The agendas included a wide range of topics and encouraged a robust discussion of differing opinions related to consumer food lifestyles, processed food, sustainability and nutrition.

Conference Beat®–The National Restaurant Show, Chicago

The National Restaurant Show opened with the news of new management with the Informa acquisition of Winsight. Speculation about the future dominated conversations among exhibitors and media companies. Restaurant operators, looking for what’s new and what’s next to delight their customers, were treated to many of the time honored tasting events and hospitality functions.

The Private Label Manufacturers Association (PLMA) returned in-person after three years of virtual engagement. If the growth rate in private brand sales continues at the current rate, it is expected to increase 9% this year – almost twice that of national brands. Inflation and consumer financial pressures are forces driving the momentum.

The National Restaurant and Sweets & Snacks Shows were exuberant reunions of industry colleagues and friends that packed the show floors and events all around city. The Chicago Venture Summit Future-of-Food was a sold out conference that attracted a local and international audience.

The Specialty Food Association’s Winter Fancy Food Show returned to an in person event with all of the excitement and fanfare the new location in Las Vegas had to offer. Professionals in a wide range of retail and foodservice businesses emerged from behind their computer screens to explore flavor trends and sample new products. Members of Les Dames d’Escoffier International (LDEI) gathered in San Antonio to reconnect and share ideas on what the future might hold for the food, fine beverage and hospitality industries.  This was the first chance members had to gather in person since their exclusive 2020 Trends Report was released before the global pandemic changed the world.

National Association of Convenience Stores (NACS), Chicago’s McCormick Place

The National Association of Convenience Stores (NACS) Show returned to a live format at Chicago’s McCormick Place this month. Mask mandates and light traffic did not dampen the enthusiasm of those that attended. The theme, “We Got This!” expressed optimism for the future of convenience retail operations.

The Specialty Food Association’s Winter Fancy Food Show is traditionally the first major industry forum of the year that attracts professionals in a wide range of retail and foodservice businesses. It is a unique opportunity to explore flavor trends and sample new products. Yet 2021 is beginning much differently than normal and this year’s virtual show was very different than the tasting experiences that characterize this business.

SIAL Paris (Salon International de l’Alimentation), the world’s largest food innovation exhibition that includes foodservice, retail grocery and food processing business sectors was a virtual experience this year. Even though there is nothing that can replace the personal interaction at this global conference, the virtual conference did not disappoint, with of-the-moment research and insight on the tumultuous world of the food business today. The theme of this year’s conference #Ownthe change invited food professionals to claim the change as their own.

The goal of this year’s virtual conference was to bring together leaders from a wide range of disciplines in the food industry for a robust conversation that challenged the status quo and fostered new insight. SHIFT20 was about so much more than ingredients and processing techniques—it was about a shift in thinking that brings the world better food.

The Private Label Manufacturers Association (PLMA) is the perfect show to review at the end of the year because it provides a glimpse into which trends spotted through our research and attendance at all of this year’s shows and conferences are becoming mainstream products. The show continues to grow with 1,500 exhibiting companies from 40 countries and 25 international pavilions. A special feature of the show, The Idea Supermarket, showcased 468 new products.

Scalable sustainability will push the boundaries of food systems as we know them today. New product concepts in ideation phase include using lab-grown meat technology to grow endangered species; for example shark fin soup is still culturally relevant but dubious in current sourcing practices. Another idea is a crop rotation cracker: using a different bean or legume in the formulation based on the principle of rotating crops to maintain the longevity of the soil.
